July 4 - Independence Day
On this day in 1776 the American colonists declared their independence from England, and so of course this is a very patriotic day of fireworks, parades, and lots of red, white and blue clothes.
We decided to bake an “Independence-Day-Cake” on July 3rd.
Here’s the recipe: sponge cake
1 pinch of salt
50 g corn flour
50 g wheat flour
500 g of strawberries
200-250 g of blueberries or blackcurrants
2 cartons of cream
Beat the eggs with the sugar and the pinch of salt until they are light and creamy. Then carefully sieve in the wheat flour mixed with the corn flour and fold it in. Pour it on the cake tin and bake it in the oven for 6-8- minutes at 200 degrees Celcius.
When it is cold whip the cream and use it to cover the cake. Make a 5 inch square section in the top left corner. Put the blueberries here very close together. Slice the strawberries and lay them in stripes across the rest of the cake. Start with a stripe of strawberries at the top and make 13 stripes in all (7 red, 6 white) so that you finish with a red line.
